Give hosts the ability exclude/override individual reservations from statements or payouts eg exclude cancelled reservations that do not count as "stayed" (i.e., pre-stay cancellations, where revenue is considered a cancellation fee not owed to owners) even if there was a payout/cancellation fee.

YES!
I still prefer to SHOW the reservation no matter what (I personally do not like the ability to simply omit a reservation from owner statement as I think that would not be ethical).
For example, IF I am able to get rebooked then I split the cancellation fee from initial booking with the owner. If I do not, then owner gets normal payout.
